Potato Leek Pizza

Three seconds after I had filled my belly with the morning’s eggs and toast, wiped my mouth and pushed my plate away, my husband inquires, “What do you want for supper?”  I find this the worst possible time to ask someone what they want for supper, because the obvious answer is something along the lines of: who cares about supper, I just ate breakfast, how can you possibly be thinking about food at a time like this?  But he is thinking about food, because my husband is all about the groceries.  He walked into the kitchen, opened the freezer and began rattling off possibilities:  beef fajitas, chicken, tenderloin, or pizza.  I chose pizza. 

Tonight was pizza night at the J&A Chicken Ranch.  But it ain’t your ordinary pizza.  We forewent greasy pepperoni slathered in tomato sauce and instead made a dreamy homemade pizza.   It’s a recipe for Potato Leek Pizza from the Pioneer Woman.

I know what you’re thinking.  Potatoes? On a pizza? 

Listen folks, don’t knock it till you try it. 

The Pioneer Woman Cooks: Recipes from an Accidental Country Girl

The recipe is in her cookbook, which is really worth buying, but the recipe is also plastered all over the internet.  Having this silly, nilly blog, I do consider copyright laws on occasion.  Also I’ve never broken a law in my life, especially copyright laws.  Being a teacher, you must know I would never, ever copy something wrongfully.  Not a lesson.  Not a test.  Not a book.  Not my bottom on the Xerox machine.  Never.  

Plus, I would hate for Ree Drummond to sue me for my chickens and oyster shell, therefore I am choosing not to post her recipe.     But bend an ear to me.  Closer.  A little closer.

It’s a magical combination of



leeks (white parts only)

red potatoes

fresh mozzarella, parmesan, and goat cheese

There’s probably a special section in heaven where angels sing Odes to cheese.

You layer it all together,

 stick it in the oven,


and *presto* instant happiness.

We don’t make our own crust.  We’re just not that talented around here.  But I’m sure with a homemade pizza crust, it would be absolutely out of this world. If you’re ever in the mood for interesting flavors and something completely different from your average run of the mill pizza, then you should try this.

Then after your belly is good and stuffed, carry  the green tops from the leeks and leftover potatoes outside.  Throw a little  in the compost pile, and the rest to the chickens. 

They deserve it.

    I feel kind of stupid for asking, but what is a leek?


    1. Hi Brandi
      A leek is is the onion family, and has tall green stems with a white-ish bulb at the bottom. It looks like a spring onion (aka green onion, aka shallot) but is a lot thicker. it is often used with potatoes, such as in potato leek soup.

      I had to go to the store for the cheese, but we were planning on making it, so Jason had picked up the ingredients he could remember like the leeks and the pizza crust. And we both made it together. We’ve been doing some cooking together out here on the place. In town, that kitchen wasn’t big enough for two people to work really. Even though the kitchen out here is smaller, it seems like we have more room, weird huh? I love you back.

    I will forever be indebted to Ree (for many reasons and for many recipes) but particularly for leading me to this blog! I have been following her for years now and somehow, somewhere I picked up your link for whatever reason from her site. I have no idea what you (or she) posted that nudged me to come here, but I have thoroughly enjoyed EVERY day since the first one! And Yes, this is among my top five recipe books (and I probably truly have over 300 or more!) And Yes, the potato leek pizza is ammmaaazzzing!!! And you must try and make her cinnamon rolls …yummy! You and Jason would really enjoy making those together some weekend. The recipe makes about 50 or more rolls, so they are nice to take to church friends on Sunday or to school. Don’t let the “yeast” thing scare you off. It’s really pretty simple. You are so fortunate to have a hubby who likes to spend time in the kitchen and is checking the grocery list regularly! I have been following Ree for many years and somehow, somewhere I picked up your link ( I have no clue what she or you would have said that nudged me to come over and take a peek at Chronicles, but I have to say I have enjoyed EVERY day since that first time! And Yes, the potato leek pizza is aaammmaazzzzing!! (hate cleaning those darn leeks tho’, but we got a new Trader Joe’s here and they sell them already cleaned !! yea for Trader Joe’s! And I found an asparagus risotto there last week and immediately thought of you two kids:) Pretty tasty stuff, I’d say! You guys should really try to make Ree’s cinnamon rolls (in the book). They are really pretty sinple (don’t let the yeast thing scare you) The recipe makes about 50 rolls so they are great for making on a Saturday and taking several pans to church friends or to school on Monday!       Yes, Ree is great, I’ll agree. I have made the cinammon rolls, all by myself, because J-Dub is not a fan. He actually liked hers somewhat though. They are plenty moist and gooey (read buttery here). Mmmm, maybe I’ll make up a batch again soon.

We should be so grateful for our amazing daughters (I have one) and I thank the good Lord every day for her and I always include Angel in my prayers as well.
